This is a really quick, really light mid-week meal. If you do not have a steamer or you are making larger quantities, you can cook the fish in the oven in an enclosed parcel (foil or parchment), adding another teaspoon of water. This is excellent for those with a kapha imbalance as it is a light but pungent dish. It also works for pitta and vata – leave out the chilli but you can add a teaspoon of ghee/butter to the dish as it cooks (vata can add 1⁄4 teaspoon sesame oil too). Serve with steamed rice.

Ingredients

Quantity Ingredient
1 fillet fish, such as plaice, sole, sea bass, bream or other flat fish
100g sprouting broccoli or other greens, steamed along with or before the fish

Marinade

Quantity Ingredient
1 1/2 teaspoons light soy sauce
3/4 teaspoon dark soy sauce
7 drops sesame oil
1 1/4 teaspoons chinese cooking wine
good pinch sugar
5 cm length spring onion, cut into fine julienne, (kapha – reserve a little of the green to garnish)
2g ginger, peeled and cut into thin slices or fine julienne
1 garlic clove, peeled and crushed well to release its juices
1/8-1/4 red chinese chilli, deseeded and sliced
1 star anise

Method

  1. Mix together the ingredients for the marinade in a non-metallic bowl and add 1 teaspoon of water. Press on the aromatics a little to help them release their flavour. Pour over the fish and leave to marinate in a cool place for 20–30 minutes if possible.
  2. Heat 2.5 cm of water in a wide steamer or a wok with a wire rack set inside. Place the fish with its marinade in a small plate that fits in the steamer (or make an aluminium foil boat for it). Place in the steamer, cover and cook for 4–6 minutes or until the fish is cooked through. Remove the garlic and pour the rest of the marinade over the fish. If you are kapha, garnish with reserved spring onion.
