Grilled sole with lemon, almonds and parsley

This simple dish is perfect for mid-week suppers. It is really easy to prepare and quick to cook. It can work for all the body types, but serve with grains or vegetables to suit your own dosha. The fish is also delicious sprinkled with fresh breadcrumbs instead of the almonds. Serve with fresh vegetables.

Ingredients

Quantity Ingredient
2 dover or lemon sole fillets
4 teaspoons lemon juice
1/2 teaspoon lemon zest
1 teaspoon ghee or butter, (kapha leave out)
2 teaspoons vegetable oil
2 garlic cloves, peeled and made into a paste
salt
1 1/2 teaspoons slivered or flaked almonds
1 tablespoon fresh parsley, chopped

Method

  1. Preheat the grill to 180ºC or a medium heat.
  2. Rinse the fish fillets and pat dry, check for any bones and remove if necessary. Place the fillets in a small, snug baking dish.
  3. In a bowl, whisk together the lemon juice and zest, ghee (if using), oil, 2 tablespoons water, garlic and salt and spread over the fish; turning once to coat. Sprinkle the almonds on the top and place under the grill (on one of the lower racks if possible) and grill for 5–6 minutes or until the fish is cooked through and the almonds have slightly browned. Transfer to your plate, stir the parsley into the juices in the pan and pour over the fish and serve.
