This mildly spiced curry is wonderful for vata as it is creamy and soft and warming from the spices. Coconut milk is a wonderful ingredient to pair with fish as it is cooling (fish is quite heating), so this is a good way for those with a pitta imbalance to enjoy fish. If you are pitta, mince the seeds where mentioned below for a milder dish. Use any white fish fillets in this dish. You can also add some fresh peas or other vegetables to the curry. Serve with rice.

Ingredients

1 tablespoon vegetable oil or ghee
2.5cm cinnamon shard
3 cloves
1/3 teaspoon mustard seeds
8 fenugreek seeds, (optional, omit if you have a strong pitta imbalance)
5 black peppercorns, (optional, omit if you have a strong pitta imbalance)
7 curry leaves
1/2 small–medium onion, peeled and thinly sliced
1 1/2 teaspoons garlic paste
1 1/2 teaspoons ginger paste
1/4 teaspoon ground turmeric
salt
150ml coconut milk
250g firm white fish fillets of your choice, cut into large cubes
1 teaspoon lemon juice, or to taste

Method

  1. Heat the oil in a small non-stick saucepan. Add the whole spices and cook until the mustard seeds pop. Add the curry leaves, immediately follow with the onion and cook until soft.
  2. Add the garlic and ginger and stir-fry for 1 minute, adding a splash of water if it looks like it might burn. Stir in the turmeric and season to taste with salt. Add around 100 ml water and simmer for 7 minutes or until quite reduced. Add the coconut milk, bring to a boil and cook for 2–3 minutes. Taste and adjust seasoning and check the amount of sauce in the pan – it should be creamy but not thick (cook off any excess water or add a little more from the kettle).
  3. Stir in the lemon juice, then add your fish in one layer and cook on a gentle simmer until done, around 4–5 minutes, shaking the pan from time to time. Serve with rice.
