I make no apology for including this wonderful Indian chopped salad recipe, though I have published it before. It is the classic version, and my best recipe for it. A kachumber is served with many Indian meals; it is crunchy, fresh and delicious. I have omitted the green chillies that often go in. If you like their clean heat, add 1 small green chilli, deseeded and finely chopped. You can also add chopped mint leaves instead of dried if you prefer.

Ingredients

Quantity Ingredient
2 largish ripe tomatoes, chopped
200g cucumber, chopped
4 small radishes, trimmed, halved and finely chopped
1/3-1/2 small red onion, finely chopped
large handful coriander leaves, chopped
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice, or to taste
1 teaspoon roasted ground cumin, or to taste
1 tablespoon good-quality dried mint, crushed to a powder between your fingers
a good pinch freshly ground black pepper
salt

Method

  1. Mix everything together. Taste and adjust the seasoning and serve.
