A refreshing raita that is really versatile, great with grilled meats or just with some naan or pitta bread.

Ingredients

Quantity Ingredient
200g cucumber, coarsely grated
400g thick plain yogurt
freshly ground black pepper
8g mint leaves, shredded
3/4 teaspoon roasted ground cumin
small pinch caster sugar
salt

Method

  1. Squeeze all the excess water from the cucumber and place it in a large bowl. Add the remaining ingredients and stir well. Chill until ready to serve.
