Stir-fried leftover spicy tomato and pea rice

This is based on a street food of Mumbai. It is made from cooked rice and vegetables stir-fried with Indian flavourings and a special spice blend on a large, flat, cast-iron pan. It becomes smoky, spicy and tangy. I normally eat brown basmati rice at home, and the nuttiness works really well in this dish. You can add whichever leftover vegetables you have lying around. Here I have kept it simple and made it with just peppers and peas.

Ingredients

1 tablespoon vegetable oil
1/2 small-ish onion, sliced
1/2 small red or orange pepper, in 2 cm cubes
1 green chilli, whole but pierced with the tip of a knife
2 garlic cloves, peeled and finely chopped
1 tomato, chopped
3/4 teaspoon ground cumin
1/4 teaspoon chilli powder, or to taste
1/4 teaspoon turmeric
3/4 teaspoon ground coriander
1/2 teaspoon dried mango powder
1/2 teaspoon garam masala
salt, to taste
large handful frozen peas
200-225g brown basmati rice, cooked, (cooked weight)
lemon wedges, to serve
or lime wedges, to serve

Method

  1. Heat the oil in a large frying pan. Add the onion and cook over a high heat until browning at the edges. Add the pepper and chilli and cook for another two or three minutes, or until the onion has well-browned edges. Add the garlic and cook on a low heat for 40 seconds, stirring. Add the tomato, spices and salt and cook over a medium-high heat, mashing the whole thing together, for six to seven minutes.
  2. Add a splash of water from the kettle along with the peas and cook for two or three minutes. Taste to make sure the spices are not raw or powdery and that everything tastes harmonious. Add the rice and stir-fry over a high heat, adding a couple of spoons of water, until the whole thing comes together in a lovely hot mass. Taste, adjust the seasoning and serve with lime or lemon wedges on the side.
