Method

  1. Grate ½ large cucumber coarsely, squeeze out excess water and place in a large bowl. Stir in 400 g of yogurt, 8 g of shredded mint leaves, ¾ teaspoon of roasted ground cumin, and a small pinch each of caster sugar and chilli powder. Season well, taste, and adjust the seasoning. Refrigerate until ready to use.
