My husband’s family only eat baked beans like this. Serve on wholemeal toast for brunch.

Ingredients

Quantity Ingredient
2 teaspoons vegetable oil
good knob unsalted butter
1 small red onion, finely chopped
6g root ginger, peeled and grated
2 thin green chillies, deseeded and finely chopped
2 large garlic cloves, peeled and grated
800g canned baked beans
80g mature cheddar, grated
water

Method

  1. Heat the oil and butter in a pan. Add the onion, ginger and chillies and saute for two minutes. Add the garlic and saute until just colouring.
  2. Tip in the baked beans, then fill a can with water and pour this in too. Bring to the boil and simmer for two minutes.
  3. Add the cheese and stir until creamy.
