Borage boiled, like spinach, makes a delicious and nutritious simple salad dressed with olive oil, red wine vinegar or a squeeze of lemon. Make sure that you cook it for long enough so that the thick, hollow stems are tender.

Ingredients

1kg borage, washed
sea salt
freshly ground black pepper

To serve

extra virgin olive oil
red wine vinegar or lemon halves

Method

  1. Put the borage and 1 tablespoon sea salt in a saucepan, cover with water and set over high heat. Bring to the boil, then lower the heat to bring the water to a simmer, cover with a lid and cook for 15–20 minutes until the borage is tender.
  2. Drain the borage in a colander and leave it to cool before transferring it to plates. Season generously with sea salt and freshly ground black pepper and drizzle with olive oil and red wine vinegar or squeezed lemon halves.
