Spinach and eggs

I love this as a brunch or light supper dish although it’s most often eaten at breakfast time in Turkey.

Ingredients

Quantity Ingredient
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
1 medium onion, peeled and thinly sliced
450g spinach, washed and roughly chopped
2 eggs
sea salt
freshly ground black pepper

To serve

sumac, (optional)

Method

  1. Heat the butter and olive oil in a large frying pan over medium heat and sauté the onion for 5 minutes or until softened. Add the spinach and cook, stirring, until softened or for about 10–12 minutes. Season with sea salt and freshly ground black pepper.
  2. Make 2 holes in the spinach and break an egg into each hole. Cook for a few more minutes or until the eggs have cooked to your liking.
  3. Sprinkle with a little sumac, if you like, or freshly ground black pepper and serve immediately.
