This trans-seasonal salad using artichokes, young green beans and edamame goes really well with fish. It’s also great with some smoked almonds added, and for a dairy-free alternative, swap the feta for avocado. This is one of the only times I think it’s okay to use tinned vegetables.

Ingredients

Quantity Ingredient
500g tinned artichokes
2 tablespoons olive oil
300g edamame, podded
500g green beans, trimmed and blanched
sea salt and freshly cracked black pepper, to taste
1 teaspoon sumac
200g roasted smoked almonds, roughly chopped (optional)
250g marinated goat's cheese or persian feta, broken into bite-sized pieces

Citrus thyme dressing

Quantity Ingredient
3 tablespoons lemon juice
2 teaspoons dijon mustard
2 tablespoons honey
3 thyme sprigs, leaves picked
150ml olive oil
sea salt and freshly cracked black pepper, to taste

Method

  1. Cut the artichokes into quarters, squeeze out the excess liquid and pat dry with paper towel. Remove the outermost leaves and reserve.
  2. Heat the oil in a shallow frying pan over medium heat until hot. Fry the reserved artichoke leaves for 2–3 minutes, until crispy. Transfer to paper towel to catch any excess oil and leave to cool. Fry the artichoke quarters in the hot oil for 5 minutes, until golden brown.
  3. Add the artichoke quarters to a bowl with the edamame and green beans, and stir to combine. Season with salt and pepper to taste, then mix in the sumac, smoked almonds, if using, and feta, then toss gently.
  4. To make the dressing, combine all the ingredients, except the oil, in a measuring jug. Blend the mixture with a hand-held blender until combined, then continue blending while slowly drizzling in the oil to emulsify. Season with salt and pepper to taste.
  5. Transfer the salad to a serving bowl, drizzle over the dressing and sprinkle with the crispy artichoke leaves.
